In a return to the spirit of the very early episodes of Folkloring, I welcome author Michelle Heberling on to discuss fermentation – what it is, why we need it for good health and what good microbes mean to you. 

Michelle is the author of The Guts of Fermentation, a fermentation educator and a beekeeper who challenges the modern narrative around gut health. 

 

Her work asks a harder question: what happens when microbes are removed from food and the full burden of digestion is pushed onto the body?
